1. Tends machine that clarifies wine prior to filtering: Starts pump to transfer fermented wine from settling cask to clarifying tank. 2. Spreads chemicals over surface of wine to aid in clarification, and starts agitator to mix ingredients for specified period of time. 3. Stops agitator to allow suspended matter to settle. 4. Starts pumps to transfer clarified wine to filtering tank. 5. May fumigate empty wine casks with bottled gas and burn sulfur sticks in casks to kill bacteria.
